Ingredients

  • 1 tbsp oil
  • 1 large onion, chopped
  • 1 garlic clove, crushed
  • 1 tbsp tomato purée
  • 1 tsp mild chilli powder
  • ½ tsp ground cumin
  • 400g tin chopped tomatoes
  • 400ml (14 fl oz) vegetable stock
  • 400g tin kidney beans, drained and rinsed
  • 1 x 400g (14 1/4 oz) tin butter beans, drained and rinsed
  • 1 red pepper, diced
  • A handful of chopped coriander

For the cheesy garlic bread

  • 6 slices of baguette
  • 50g butter, softened
  • 2 garlic cloves, crushed
  • 100g grated Cheddar cheese

Method

This hearty, budget-friendly meal combines chunky kidney and butterbeans for texture, with a touch of chilli powder for spice (feel free to adjust the heat to your preference). The cheesy garlic baguette makes a perfect dunking companion.

  1. Heat the oil in a large pan over medium-high heat. Cook the onion for about 5 minutes, until softened. Stir in the garlic, tomato purée, and spices, and cook for another minute. Add the chopped tomatoes and vegetable stock, then bring to a boil. Once boiling, cover the pan and simmer for 10 minutes.
  2. Remove from heat, allow the mixture to cool slightly, then blend it until smooth. Return the blended soup to the pan.
  3. Stir in the kidney beans, butterbeans, and red pepper. Bring back to the boil and simmer for an additional 10 minutes. Season to taste, and add more stock or water if you’d like a thinner consistency.
